All these are great suggestions, and here is another technique. Place your salmon fillet on a large square of foil, season with lemon juice, a sprig of dill and a splash of white wine. Wrap the foil around the salmon leaving a gap between the fish and the top fold but completely sealed, and cook it in a steamer for around 12 mins or until cooked. Delicious and healthy.

I find that if I use a non stick griddle pan or just a good non stick frying pan, and get the pan hot before putting the salmon in, there is no need to use fat - even salmon without skin has enough natural fat to cook it.

Answer from Tom Norrington-Davies Guru
Poaching salmon is the best way to cook it fat free. Bring a pan of water, deep enough to just cover the fish, to a simmer. Season it with a bay leaf and some black peppercorns. Add a generous pinch of salt. Then add the salmon fillets or steaks, in a single layer. As soon as you do, take the pan off the heat, cover and leave it until the water has cooled enough for you to remove the fish without burning your fingers. Perfect poached salmon. However, see my other answer from today for what I think is the best way to cook salmon. It involves a smidgeon (just a smidgeon, I promise) of olive oil.
