suggestions for tapas

Yum - all the above sound great!
In this country I think it is important to use what we have - I am a great believer in tapas being a using-up dish. So if you have some food left over then you can try and convert it to a tapas dish.
For example if you have some roast chicken left over why not make a coronation chicken sauce and then simply grill some left over baguette, pile the chicken with the sauce on top and hey presto - left overs gone and tapas starter made!
Once you start thinking like this the sky is the limit!
That one left over sausage can become a brochette to serve 3 or 4 - slice it into rounds then slice some gruyere cheese, gherkins or whatever else you fancy. Get some cocktail sticks and start to compile your brochettes with the sausage, cheese etc..
I really love tapas - it is very informal, great for trying out things if you are a chef and friends never know what they are going to get! It is also a really fun way for children to try new foods without having to have too much and they can also get involved in the prepartion too!

I have various dishes I use for tapas, one of the most popular and delicious is tiger prawns which I buy frozen uncooked, wrapped in smoked bacon and marinaded in sweet chilli sauce. Fry in hot olive oil for 2-3 mins until bacon is cooked. Another option is chicken goujons in honey and mustard...fry the chicken and add tsp dijon mustard and a couple of tsp of honey.

Meatballs with horseradish and sweet onion relish always go down a treat and I usually serve these in mini fajitas. Just mix the beef mince with creamed horseradish, salt and pepper and make into mini meatballs, fry the onions until browned, add can of guiness,brown sugar, and drop of balsamic vinegar and either fry metballs or cook in oven.

I then usually do chorizo sausage in red wine, fry onion, pepper and sausage, add tin tomatoes and red wine and cook for about 1/2 hour.

Finally I've tried to find a good potatas bravas recipe and have eventually settled on this one. Peel and cut potatoes into 1 inch squares and roast unitil browned. Make sauce with onion,pinch of chilli, garlic and tin tomatoes and pour over potatoes to serve.
