Take some white fillets of fish and lay out flat. put a slice of smoked salmon on top then a layer of cream cheese that has been mixed with seasoning, lime juice and half the grated lime rind.
Roll them up and secure with a cocktail stick.
Put a knob of butter on top of each one then place in a dish with a little white wine and cook in oven at 190 for 17 minutes.
Really quick and easy and looks impressive.
Great served with cous cous which is also very quick to make or new potatoes with melted butter and parsley.

Take some fish steaks, pop then into a foil parcel, seasoned with lemon juice and butter and salt and pepper. Bake. Serve with a jar of Hollandaise sauce, warmed through with some chopped fresh tarragon.
