I do a similar recipe but use bacon lardons and pine nuts and lots of garlic - sizzle the scallops in last and then pour the lot over some mixed leaves and add lemon juice and olive oil to taste......

This is so fast and always tasty (courtesy of Nigella).
400g scallops, 110g chorizo sausage. juice of half a lemon and some chopped parsley.
slice the chorizo. fry (use no oil, no nothing) in a hot pan on both sides. Takes a few mins. Remove. fry scallops in chorizo juice/oil for a minute a side. No more. Add chorizo and lemon juice and let heat for a few seconds. Sprinkle over parsley and serve/
