I would love a recipe for making my own lemon infused olive oil - any ideas?

Try the following:-
Ingredients:
1 cup olive oil
3 tablespoons finely grated lemon zest (use an unwaxed lemon)
Directions:
1. Place the oil and the zest in a sterilised glass jar and let it stand at room temperature for at least 2 weeks, shaking occasionally.
2. Pour the oil through a strainer and discard the zest. Transfer to a clean jar and store, tightly covered in the fridge.
