I am bored of all the chicken dishes I make and need some more simple chicken meals to add to my repertoire...low fat but not too stuffed full of vegetables...

One of my favourite, easy dishes is fajitas.
Kids love them as they can "make them" themselves.
I always do them like this:
Slice and fry 2 onions, half a green pepper and half a red pepper. Allow the onion to slightly cameralise in places for extra flavour.
Put the onion mix to one side and in the same pan cook your diced chicken.
Season with salt and pepper.
Whilst doing this warm the fajitas in the oven, get sour cream, guacamole and spicy tomato dips out of the fridge.
When the chicken is cooked, put all the dishes on the table and let everyone help themselves! Serve one flour fajita each to start with and put the others in the oven covered in foli to keep warm.
Easy peasy and scrummy yummy!

There's a delicious recipe in the Moro cookbook - unfortunately I do not have it to hand as the contents of my kitchen are in storage but it's very easy. Slather your chook in Harissa sauce and bung in the oven as normal. The Harissa gives the chicken a bit of a fiery kick but it's not too hot for kids to enjoy. Somehow coating the flesh in sauce makes for a more succulent-tasting meat. Great with couscous and beans.

You have GOT to try Nigel Slater's roast chicken risotto. The brilliance of it is that you have roast chicken one night (with lemon and thyme, and a leafy salad), and then the next evening, you strip your chicken, make a stock with the leftovers, and embark on this lovely, gooey, gorgeous dish - so easy, that it's my husband's "dish" when friends come over. You'll find the recipe in Nigel's book Real Food.
